Overnight Baked Oatmeal
One of our grandkid's favorite breakfast options is Baked Oatmeal. I wasn't around when Jeff mixed up the batter, but my guess is it was very similar to this recipe from Mel's Kitchen Cafe.
Easy Amish Baked Oatmeal
- 3 cups rolled oats
- 1/2 cup brown sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 1/4 cups milk
- 1/4 cup maple syrup
- 2 eggs
- 6 tablespoons melted butter (if baking right away) or oil (if letting sit overnight)
- Toppings: additional milk, berries, sliced bananas, chocolate chips, chopped nuts, etc.
Combine the dry ingredients in one bowl, and set aside. Whisk together the liquid ingredients in another, then stir into the dry mixture. Pour into a greased 9x13" pan. Bake right away, or cover and put in the refrigerator for up to 24 hours. Bake uncovered at 350 degrees for 25-30 minutes. Serve warm with desired toppings.
I was fortunate to see the proof that these cuties really do inhale this dish, particularly when it's topped with chocolate chips!
