Cranberry Vinaigrette
This dressing made a delightfully refreshing salad; our combination included romaine lettuce, cucumbers, red onion, mandarin oranges, toasted walnuts, and feta cheese.
Cranberry Vinaigrette
- 1/2 cup cider vinegar
- 1/4 cup fresh cranberries, finely minced
- 1/4 cup olive oil
- 2 teaspoons sugar
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
Combine all ingredients. Makes a great autumn salad dressing. Try it over a mix of romaine, endive, diced pears, toasted walnuts and Gorgonzola cheese.

Note: This is quite tangy, and while we do like it that way, I think reducing the vinegar a bit would not be a bad idea.
