Fajita-Style Shrimp and Grits
We love Shrimp and Grits, so when this recipe popped up in my search for recipes using cilantro, it immediately made it to the "to try" list. And it is delicious!
Fajita-Style Shrimp and Grits
- 1/2 pound raw shrimp
- 1 tablespoon fajita seasoning (or chili powder, onion salt, garlic salt, and cumin to taste)
- 2 cups water
- 1/4 teaspoon salt
- 1/2 cup stone-ground grits
- 3/4 cup Mexican-blend grated cheese
- 1-2 tablespoons milk
- 1-2 tablespoons olive oil
- 1-2 sweet peppers, sliced
- 1 onion, sliced
- 1 cup salsa
- 2-4 tablespoons orange juice
- 2-3 tablespoons minced cilantro
Sprinkle the seasoning over the shrimp and let marinate for 15-30 minutes.
Bring the water to a boil; stir in the salt and grits and cook until done, about 15-20 minutes. Remove from heat; stir in the cheese and milk. Set aside and keep warm.
Heat oil in a skillet. Add peppers and onions and cook until soft. Stir in shrimp, then salsa, orange juice and cilantro. When shrimp is cooked through, serve over the cheesy grits.
Garnish with additional cilantro, if desired. Serves 3-4.
