Feta & Chive Muffins

I'm not sure where I came across this recipe, but because we had just purchased a Costco-sized container of feta cheese, it jumped out at me. We're trying to cut down on baked goods, so I only made a half batch. However, I quite liked these and we'll likely have them again. Unfortunately, even though I let them sit for several minutes after baking (which is supposed to help) the muffins stuck to the paper liners; we'll have to figure out how to avoid that next time! 

Feta & Chive Muffins

  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 1/2 cup feta cheese
  • 3 tablespoons minced chives (or green onions)
Combine the dry ingredients. Combine the eggs, milk and butter. (Note: I find it easiest to melt the butter first in my glass measuring cup, then add the milk and eggs.) Combine the two mixtures. Gentle stir in the cheese and chives. Spoon into papered or greased muffin cups and bake at 400 degrees for 18-20 minutes. Serve warm. Makes 12 muffins.
