Tuna Salad

This was actually a very simple, quick salad. Combine a can of tuna (drained) with about 1/4 cup of mashed avocado (or guacamole) and season to taste. Place a layer of spinach on a plate, sprinkle on some grated carrots and top with the tuna mixture. Drizzle with some olive oil and balsamic vinegar and serve immediately.
