Bacon and Tomato Salad
This is a recipe (from my old "Dinner in a Dish Cookbook") I remember my mom making, only she used rabbit instead of chicken. And I used turkey. Maybe someday I'll make it with chicken!
Bacon and Tomato Salad
- one head lettuce, torn into pieces
- 2 cups cooked chicken (or turkey or rabbit)
- 8-10 slices bacon, crisply fried
- 2 large tomatoes, cut into wedges
- 1 hard-cooked egg, sliced
- Barbecue Dressing (below)
Toss well-chilled lettuce, chicken and bacon together. Garnish with tomatoes and egg. Serve with dressing.
Barbecue Salad Dressing
- 1/2 cup mayonnaise or salad dressing (Miracle Whip)
- 1/4 cup barbecue sauce
- 1 tablespoon minced onion
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Mix all ingredients; chill.
