Shrimp Salad
We finished off the Seafood Pasta Salad, but we still had some thawed shrimp to use. Trying another salad variation seemed like a good idea. Because we also had tomatoes and fresh mozzarella in the refrigerator, I selected this recipe for inspiration. (Another option was to add the shrimp to some gazpacho, but instead we added it to our fried rice takeout.)
Shrimp and Fresh Mozzarella Salad
Drizzle cooked shrimp with some Italian dressing or balsamic vinaigrette. Let marinate for a while if desired. Combine with fresh mini Mozzarella balls, chopped or cherry tomatoes and fresh basil or parsley. Add diced cucumbers, sliced mushrooms, black olives and/or Parmesan cheese as desired. Serve cold.
