Tropical Carrot Bread

 

I wasn't really a fan of this Tropical Carrot Bread - it was too dry and crumbly and contained raisins - so I'm not going to bother typing up the recipe, but if you really want to try it, zoom into the picture below. Unfortunately, we will be having it again, because there are some variations - regular oats/quick oats, salt/no salt, Crisco stick/regular Crisco. That's okay, though, it's part of the fun of experimenting with new recipes. And because it used only egg whites, it's giving me the motivation to try homemade eggnog!
