Salmon Quesadillas

We only used part of the can of salmon in our salad the other day, so using the rest for lunch today just made sense. These quesadillas were much better than just plain cheese in a tortilla! Inspiration came from here and here. Of course, this is really a non-recipe; add whatever you have on hand that you think looks appetizing.

Salmon Quesadilla

Layer cheese (I mixed cheddar and mozzarella) on a tortilla. Top with chopped salmon (either canned or leftover or even smoked). Stick in microwave until cheese melts (or use a griddle or frying pan to cook). Top with freshly made guacamole, salsa, and/or sour cream. (I mashed some avocado with minced onion and tomato, and then garnished with Wayne's favorite dip - which is basically salsa mixed with sour cream.)
