Irish Scones
These Irish scones - which we decided to serve for breakfast on St. Patrick's Day this year - are very similar to English scones. Really the only difference is the addition of an egg. However, these are worthy of their own post.
Irish Scones
- 2 cups flour
- 2 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/4 cup cold/frozen butter
- 1/2 cup whole milk
- 1 egg
Combine the dry ingredients then grate in the butter. Combine the milk and egg and stir in, saving a couple of teaspoons for later. Roll the dough out and cut into circles. Brush with the extra liquid and sprinkle with demerara sugar. Bake at 475 degrees for 14-16 minutes.
