Beef and Bean Burritos

In honor of Cinco de Mayo, I decided to make burritos for dinner. It looked like this Pioneer Woman recipe would be a good choice to try. I thought our burritos turned out well, but I learned that my loving husband prefers shredded meat and not crumbled hamburger. In the future I need to remember to get our burritos from restaurants and stick to enchiladas or quesadillas at home!

For today's pot of beans, I used 1 1/2 cups pinto beans and 1 1/2 cups black beans, with water in the Instant Pot to the 8-cup line, plus about 1 tablespoon of apple cider vinegar, 2 teaspoons salt and 1 teaspoon sugar. I processed them for 75 minutes and then let them sit in the pot for a couple of hours (after unplugging the machine). Doctored up with onions and cheese and seasonings, they were palatable. We may try this combination again in the future.
