Two New Quick Breads

I wanted to make something mostly healthy and gluten-free to take as a hostess gift, and after looking at a dozen different recipes using mashed bananas and oats, I combined them all and created this recipe. It actually turned out quite well.

Banana Oat Quick Bread

  • 2 cups oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups mashed bananas (about 3)
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 3/4 cup chocolate chips, optional
Combine dry ingredients. Mix bananas with eggs and maple syrup and stir into flour mixture. Fold in chocolate chips, if desired. Divide batter between three greased mini loaf pans. Bake at 350 degrees for about 30 minutes.


Then I decided the gift bag was too lonely, so I turned back to the internet, this time looking for something that didn't clash and was super fast and easy. Success! We sampled each result and decided that, while different, they were both delicious.

Cinnamon Swirl Quick Bread
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup brown sugar
  • 2/3 cup milk
  • 1/3 cup canola oil
  • 1/3 cup sour cream
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • Cinnamon sugar
Combine dry ingredients (except for cinnamon sugar). Combine liquid ingredients. Mix together. Grease three mini loaf pans. Place a spoonful of batter in each pan; sprinkle with cinnamon sugar; repeat twice more. Take a skewer and gently swirl the batter. Bake at 350 degrees for about 30 minutes.
