Collard Greens


We've purchased collard greens before, but I've never recorded how to cook them. I don't want to do a search every time in the future, so here's a recipe (or method) that worked for us. And, technically, the bag from the grocery store was labeled "mixed greens!"

Collard Greens

Melt some bacon grease in a large pot. Feel free to actually use some chopped bacon in this step if you have some handy. (Some recipes suggest adding chopped ham.) Add a chopped onion along with some garlic. Fill the pot with clean, dry collard greens and sauté for just a bit. Then stir in some chicken broth and simmer for an hour or so. Salt and pepper to taste and add a squirt of hot sauce if desired. Can also sprinkle with lemon juice or vinegar if you want. See, isn't this adaptable!

Most people serve collard greens with fried chicken and mashed potatoes and gravy, maybe some cornbread. We had them for dinner with leftover Red Curry Beef and the two dishes actually complemented each other nicely.
