Old-Fashioned Apple Pie


Time to share a couple of "non-recipe" recipes!

Pare and thinly slice enough apples to equal 6 cups, more or less.

Combine about 3/4 cup sugar (using part brown sugar tastes great), 2-4 tablespoons flour, 1/2-1 teaspoon cinnamon and a dash of nutmeg, and toss with the apples.
 
Pile into a pastry-lined pie plate (here's one possible recipe) and dot with a bit of butter.
 
Top with some more rolled-out pastry, flute the edges, and cut a couple of slits. (You could also do a lattice top - Michelle's vote - or a crumble top - my vote. What's your favorite way to finish an apple pie?)
 
Bake at 375° for about 45 minutes, covering with foil for about half the time.
 
Then serve it to the "I don't like cake" birthday boy!
 
Top it with vanilla ice cream
 
or, for a special treat, some sharp cheddar cheese. Bon appetit!
