Roast Chicken

While the original recipe from the holiday roasts list was called Skillet Roast Chicken, my cast iron skillet wasn't large enough for this over-sized Costco chicken. Our regular roasting pan worked well instead.

Roast Chicken

  • 6 shallots
  • 6 red potatoes
  • 3 carrots in 1" pieces
  • 1 tablespoon olive oil
  • 1 whole chicken
  • 5 cloves garlic
  • 2 lemons quartered
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme

1. Toss shallots, potatoes and carrots in olive oil, then place in a roasting pan.

2. Put the garlic, lemons, rosemary and thyme into the cavity of the chicken. Rub outside with olive oil, salt and pepper and place on top of the vegetables in the pan.

3. Bake for one hour at 425°, or until thermometer inserted into chicken reads 165°. Let rest 10 minutes before carving.
