Classic Roast Chicken
This isn’t my favorite way to cook a chicken, but it is easy and simple, and I’m glad we tried the recipe from Wayne's list. It did make a nice and satisfactory Sunday dinner, and you may enjoying trying this method someday.
Just place a chicken in a roasting pan and surround it with chunks of potatoes, carrots, celery and onions. Insert a cut up lemon and a bunch of thyme into the cavity. Brush with melted butter and season with salt and pepper. Roast for about an hour at 425 degrees, or until done. Tent for 15-20 minutes before carving and serving.
