Instant Pot Pork Tenderloin
Time for another “dinner wish” roast! This one also helps with the “use the Instant Pot more often” goal as well. The recipe called for a 5 minute pressure cooking time, which I was a bit leery of, but that actually worked! This would be a great dish to try on a Sunday filled with meetings; I’ll have to keep that in mind for when this pandemic is over.
Instant Pork Tenderloin
Servings: 4
Ingredients
- 1 pound pork tenderloin
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1 cup water
Instructions
1. Cut the tenderloin in half cross-wise; salt and pepper to taste.
2.
Heat the oil in the Instant Pot on the saute setting, and brown
the pork on each side.
3.
Remove the pork, combine the spices and rub over the meat.

Place the trivet at the bottom of the pot, add the water, then
put the pork on the trivet.
5.
Close the pot, switch to the high pressure setting for 5
minutes. Let release naturally for 2-3 minutes, then quick release.
6.
Remove and let set for 5 minutes, then slice and serve.
This was an interesting spice rub combination, and we liked it. We think, however, that we’d prefer a herb-based one instead of the Mexican-spice-based one in the future. We’re sure any combination would work. What flavors would you use?
