Super Nachos

To honor our team playing in a bowl game, Wayne wanted to have "fully loaded" nachos (not just some grated cheese melted on top of tortilla chips). In my mind, "real" nachos need cheese sauce; however, I don't care for the stuff that comes in a can or bottle, but I did find a recipe that works, and was actually quite delicious.

Nacho Cheese Sauce

  • 6 ounces (about 1 1/2 cups) grated cheddar cheese
  • 3 ounces (about 3/4 cup) grated pepper jack cheese
  • 1 tablespoons cornstarch
  • 1 can (12 ounces) evaporated milk
  • 2 ounces cream cheese
  • dash of Tabasco sauce
Toss the grated cheese with the cornstarch. Heat the milk in a saucepan, then add the remaining ingredients. Stir until melted and thickened.


In addition to the cheese sauce and tortilla chips, we added seasoned taco meat, refried beans, salsa, sour cream, sliced black olives and jalapenos, and guacamole. They were definitely "fully loaded" and scrumptious!
