Yet Another Cornbread Recipe

We've already discovered that we like cornbread baked in a cast iron skillet. However, we have yet to find a recipe that we really like. I tried this one yet gave it away before eating any, so had to make it again. Using bacon grease, along with adding onions, corn and cheese to the batter, makes it different than other recipes we've tried.

Cheesy Skillet Cornbread

  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup grated cheddar cheese
  • 3/4 cup corn
  • 1/4 cup chopped onions
  • 1 cup milk
  • 1 egg
  • 3 tablespoons melted bacon grease
Combine dry ingredients, then mix in other ingredients. Preheat a cast iron skillet (use it to melt the bacon grease, and then it's greased as well). Pour batter in and bake for 30-40 minutes at 350 degrees.


It made a decent topping for Tamale Pie as well. This time around I didn't really follow a recipe, just combined some wheat/meat, black beans, tomatoes, corn, olives and taco seasoning.
