Cinco de Mayo Breakfast

Happy Cinco de Mayo!

I'm told this is more an American holiday than a Mexican one, but does that really matter? Especially when you're just looking for an excuse to add variety to the regular menu? So, I decided to give a Mexican flair to our normal "eggs for breakfast" routine. Here are the inspiration recipes that led to my own creation: Chile Rellenos Soufflé and Light and Airy Cheese Soufflé.

Chile Cheese Soufflé

  • 1 1/2 tablespoons butter
  • 1 1/2 tablespoons flour
  • 1/2 cup whole milk
  • 1/3 cup grated cheese (Cheddar and Pepper Jack mix)
  • 1 can (4 ounces) green chilies, drained
  • 2 eggs, separated
  • 1/4 teaspoon cream of tartar
To make a white sauce, melt the butter, stir in the flour until incorporated, then whisk in the milk and cook until thickened. Remove from heat, stir in the cheese and chilies, then gradually stir into the egg yolks. Beat the egg whites with the cream of tartar until nice and fluffy, then fold into the cheese mixture. Pour into greased ramekins and bake at 375° for 30-35 minutes. Serve with salsa. Makes 2-3 servings.


I served this very light and fluffy (so someone still feels hungry!) egg dish with my variation of Mexican Skillet Potatoes, which is basically fried potatoes with taco seasonings - chili powder, garlic powder, cumin and oregano. Super simple!

Here are some more ideas for a festive Cindo de Mayo breakfast. What would you add?

Omelet Quesadillas - Sprinkle grated cheese on a flour tortilla, top with scrambled eggs (with any desired mix-ins), then another tortilla. Cook on griddle until cheese melts.

Breakfast Burritoes - Fill a tortilla with cooked eggs, sausage, cheese, salsa, and/or potatoes.

Huevos Rancheros - Spread a tortilla with refried beans, top with an easy-over egg. Top with salsa and serve with a potato/onion/ham mixture.

Chilaquiles - Top tortilla chips with salsa and a fried egg. Garnish with chopped onion, avocado and cheese.

Chorizo and Grits Breakfast Bowls - Grits, cooked chorizo, and black beans topped with an egg and salsa. Throw in some zucchini to make it even more healthy!

Migas - Eggs scrambled with onions, green peppers, and crushed tortilla chips. Garnish with cheese and salsa.

Sopaipillas - Mexican scones

Buñuelos - Basically donut holes rolled in cinnamon sugar. (See recipe below.)

Buñuelos

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 3 tablespoons sugar
  • 1/4 cup vegetable oil or butter
  • 1 large egg
  • 1/4 cup milk
  • 1/2 cup masa harina
Combine all ingredients to make a dough. Roll into balls (or flatten into discs). Deep fry in hot oil, then drain on paper towels and roll in cinnamon sugar while still hot. Other options include rolling in powdered sugar, serving with piloncello (or a brown sugar syrup flavored with cinnamon and cloves) or chocolate sauce
