Cinco de Mayo Breakfast
Happy Cinco de Mayo!
I'm told this is more an American holiday than a Mexican one, but does that really matter? Especially when you're just looking for an excuse to add variety to the regular menu? So, I decided to give a Mexican flair to our normal "eggs for breakfast" routine. Here are the inspiration recipes that led to my own creation: Chile Rellenos Soufflé and Light and Airy Cheese Soufflé.
Chile Cheese Soufflé
- 1 1/2 tablespoons butter
- 1 1/2 tablespoons flour
- 1/2 cup whole milk
- 1/3 cup grated cheese (Cheddar and Pepper Jack mix)
- 1 can (4 ounces) green chilies, drained
- 2 eggs, separated
- 1/4 teaspoon cream of tartar
Here are some more ideas for a festive Cindo de Mayo breakfast. What would you add?
Omelet Quesadillas - Sprinkle grated cheese on a flour tortilla, top with scrambled eggs (with any desired mix-ins), then another tortilla. Cook on griddle until cheese melts.
Breakfast Burritoes - Fill a tortilla with cooked eggs, sausage, cheese, salsa, and/or potatoes.
Huevos Rancheros - Spread a tortilla with refried beans, top with an easy-over egg. Top with salsa and serve with a potato/onion/ham mixture.
Chilaquiles - Top tortilla chips with salsa and a fried egg. Garnish with chopped onion, avocado and cheese.
Chorizo and Grits Breakfast Bowls - Grits, cooked chorizo, and black beans topped with an egg and salsa. Throw in some zucchini to make it even more healthy!
Migas - Eggs scrambled with onions, green peppers, and crushed tortilla chips. Garnish with cheese and salsa.
Sopaipillas - Mexican scones
Buñuelos - Basically donut holes rolled in cinnamon sugar. (See recipe below.)

Buñuelos
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 3 tablespoons sugar
- 1/4 cup vegetable oil or butter
- 1 large egg
- 1/4 cup milk
- 1/2 cup masa harina
