2022 Bake Sale Cook Book Recipes
I don't remember how long it took us to go through the recipe book last time, but this time around took about six to seven months, finishing on New Year's Eve. I wonder how long the next rotation will take.
Toffee Chunk Brownie Cookies - Can't go wrong with chocolate cookies! The toffee bits made this recipe unique, but they were absorbed into batter and not really obvious in the finished product. Note that even though the recipe calls for butter, we prefer our cookies made with margarine or shortening, or a mixture. (Made 11 June 2022)
- 1 cup butter
- 4 ounces unsweetened chocolate, chopped
- 1 1/2 cups sugar
- 2 eggs
- 1 tablespoon vanilla
- 3 cups flour
- 1/8 teaspoon salt
- 1 1/2 cups coarsely chopped chocolate-covered toffee bars
Cheesecake Bars - This time we used a can of raspberry pie filling; it was the best variation yet. (Made 9 July 2022)
Mississippi Mud Brownies - Bake a pan of brownies (9x13" size). While still hot, top with marshmallow fluff (one 7 ounce jar), then 1 cup melted chocolate frosting. Use a knife to swirl together, then let cool completely before cutting into bars. (Made 30 July 2022)
Lemon Poppyseed Cupcakes - Prepare a box of lemon cake mix as directed, and stir in about 3 tablespoons of poppyseeds. Bake as cupcakes then cool. Stir a few drops of yellow food coloring and lemon extract, along with some lemon peel into vanilla icing and frost the cupcakes. Decorate with yellow and orange gumdrops. (Made 3 September 2022)
Orange Streusel Coffeecake - We didn't do a very good job of dividing the batter in half, and we think we'll prefer the apple jelly version over the marmalade one, so it's a good thing we'll have this twice. (Made 10 October 2022)
Red Velvet Cake - Because there are three different garnish options (plain, mini chocolate chips, or milk chocolate chips), we'll be having this three times. This chocolate cake is delicious! (Made 10 December 2022)
Decadent Brownie Pie - Originally we were going to do a repeat recipe - Rustic Apple Croustade - but we couldn't find any Jonathan apples. Apparently, they've created more shelf stable varieties to replace that kind. So, we tried a very rich, and therefore quite delicious, chocolate pie. Be sure you don't forget the ice cream on top!
