Almond Poppy Seed Bread
We bought a quart of buttermilk for the Red Velvet Cake, but only used one cup, so it was time to find a recipe or two to use some up. Since it's also time to make Christmas treats for our friends, this looked like a great recipe to try.
Almond Poppy Seed Bread

- 2 1/2 cups flour all purpose
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup sugar
- 1 cup buttermilk
- 1/2 cup oil
- 2 eggs
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1 tablespoon poppy seeds
Combine all the ingredients (dry then wet then together) and place into 3-4 greased mini loaf pans. Sprinkle with a few sliced almonds if desired. Bake at 350 degrees for 30 minutes. Let cool in pans for a few minutes, then turn out to cool completely.
