Garlic Shrimp
Although basically just Shrimp Scampi, this was the best we've ever had, and we'll definitely make it again someday. The little chili peppers added just the perfect amount of a little kick.
aka Shrimp Sauteed in Garlic
- 1/4 cup olive oil
- 6 garlic cloves, minced
- 1 dried red chili pepper, cut in 2 pieces, seeds removed
- 1 pound medium shrimps, peeled and deveined
- 2 tablespoons chicken broth
- 3 tablespoons lemon juice
- 2 tablespoons parsley
Saute garlic and chili pepper in the oil. Add shrimp and stir constantly until the shrimp turns pink, then add the broth and lemon juice. Garnish with parsley and serve immediately. Makes 2 servings.
Note: The "dried red chili peppers" we found at our normal grocery store were called "japones" so we suspect we can use them in Asian dishes as well. What do you think?
