Prune Energy Squares
Those M&M Brownies were delicious, but not very healthy. Besides, there are dates and prunes in the refrigerator that need to be used. This recipe came to the rescue. Halving it meant it fit in my little food processor - always a plus when it's time to do dishes.
Chocolate Pecan Prune Energy Squares
- 1/2 cup oats
- 1/2 cup pecans
- 1 tablespoon cocoa powder
- pinch sea salt
- 1/2 cup (8-9) prunes
- 3 dates
- 1 tablespoon mini chocolate chips
Combine oats, pecans, cocoa powder and salt in a small food processor, and blend until finely chopped. Add the prunes and dates and process again until thoroughly mixed. Stir in chocolate chips and press into a square (using plastic wrap) on a cutting board. Cut into squares and store in the refrigerator.
Note: Most people form these into balls, but that's really messy, so I went the easy route and made squares.
