Strawberry Pound Cake
I had low expectations for this Strawberry Pound Cake, because the last pound cake we made didn't turn out really well. However, this cake was quite moist and, amazingly, came out of the pan without any problems!
Strawberry Pound Cake
- Duncan Hines strawberry cake mix
- Vanilla pudding mix (4 serving size)
- 4 eggs
- 1/3 cup oil
- 1 cup water
- 1 cup mini chocolate chips
- 2/3 cup chocolate fudge frosting
Combine dry cake and pudding mixes with the eggs, oil and water; beat for two minutes until smooth. Stir in chocolate chips. Pour batter into a greased and floured bundt pan and bake at 350 degrees for 55-60 minutes. Cool in pan for 25 minutes, then turn out on a cooling rack and cool thoroughly. Melt frosting in microwave for 10 seconds and stir until smooth. Drizzle over cake.
This recipe included a suggestion for using the leftover frosting - spread between two graham crackers - which is what my mother did!
