S'mores Ice Cream
Several years ago, I tried the Cuisinart ice cream maker I discovered in my dad's kitchen cupboard, and quite liked the results. Thanks to a thoughtful Christmas gift, now we can have the same deliciousness at home.
We were pleasantly surprised by the saltiness of their Butter Pecan Ice Cream, but today's recipe was all sweetness. I wonder how long it will take us to try the strawberry version.
S'Mores Ice Cream
- 1/2 cup cocoa powder, sifted
- 1/3 cup sugar
- 1/4 cup dark brown sugar
- pinch of salt
- 2/3 cup whole milk
- 1 1/2 cups heavy cream
- 1 teaspoon vanilla
- 3/4 cup marshmallow creme
- 2 full graham crackers, crushed
- 1/3 cup milk chocolate chips, melted
Combine the cocoa powder, sugars and salt. Whisk in the milk. Once incorporated, stir in the cream and vanilla. Cover and refrigerate at least two hours. (Using a quart jar is convenient.)
Place the frozen bowl in the ice cream maker and turn it on. Pour in the chocolate mixture and let go until thickened, about 15 minutes. Gradually add the remaining ingredients a little at a time through the top opening until thoroughly mixed. Serve right away, or freeze (in a different container) for two hours for a firmer concoction.
