Quick Mix - Biscuits


Quick Mix

8 ½ cups flour (can use ½ wheat flour – increase baking powder to 5 Tbls)
3 tablespoons baking powder
1 tablespoon salt
2 teaspoons cream of tartar
1 teaspoon baking soda
1 ½ cups nonfat dry milk
2 ¼ cups shortening

In a large bowl, mix together all the dry ingredients. Then cut in the shortening until even distributed. Put in a large airtight container and store in a cool, dry place. Makes about 13 cups.

Drop Biscuits

3 cups Quick Mix
¾ cup water (or milk)

Combine mix and water until just blended. Drop dough by spoonfuls onto a greased baking sheet. Bake at 450° for 10 minutes. Makes 12.

For rolled biscuits, decrease water to 2/3 cup. After mixing, knead gently, roll out to ½” thick and cut into desired shapes. Baking is the same.
