Miracle Bread

I'm not sure how much of a miracle this bread is, but we tried it and it was pretty good. I think the "miracle" is that you can make it from start to finish in one hour. I don't have instant yeast, so I gave it a bit more time for rising. It was delicious though!

Miracle Bread

5 1/2 to 6 1/2 cups flour
1/4 cup sugar
1 1/2 teaspoons salt
1 1/2 tablespoons yeast
3 tablespoons oil
2 cups water

If you're using instant yeast, just plop everything in the mixer and knead it for ten minutes. Then form into two loaves, place in pans and let rise for 25 minutes. Bake at 350° for 25 minutes. Done!

I used regular yeast, so I put the warm water into my mixer, sprinkled the yeast on top and let it soften. Then I added everything else, kneaded for 10 minutes and let it rise for half hour. Then I formed it into the loaves, let it rise and baked it as directed above. It was a perfect accompaniment to the freshly made freezer strawberry jam.

Chocolate Cream Cake

A while ago I saw this recipe and thought I would give it a try - Cream Filled Chocolate Cupcakes - at least the filling part. We had a chocolate cake layer in the freezer that I wanted to serve for Sunday dinner.

I'm not sharing the recipe, because we won't be having it again. It was the one where you cook flour and milk and then add it to your butter/shortening and sugar. It didn't become nice and creamy and thick. Instead it separated and was grainy.

It tasted fine, however, and a little graininess wasn't going to stop  us from enjoying a delicious dessert. Next time, though, we'll go with a marshmallow fluff filling of some sort.

Berry Cream Pie

This pie is a variation of our favorite Easy Cherry Cheesecake. I used a regular baked pie crust instead of a graham cracker crust. Then instead of using cherry pie filling I made a berry topping using a this peach pie recipe as my inspiration. Basically I just mixed some smashed strawberries with some sugar and cornstarch and cooked it until it was thick. Then I stirred in some blueberries, raspberries and additional sliced strawberries. Fresh berries would be delicious, but I used thawed frozen berries and they tasted great.
