Habicheulas con Arroz

This will be a recipe without exact measurements, at least for now!

For the sofritos: chop one onion, one green pepper, one red pepper, and several cloves of garlic. Sauté in a small amount of oil until tender. Add some oregano and black pepper if desired.
  To this mixture, add your dried red beans and enough water to cover them. Then cook for several hours until the beans are tender. Add additional seasonings as desired - salt, cumin, tomatoes.
  Serve over rice.


Updated: I used one pound beans (cooked before adding other ingredients because they were old beans) with one onion, 1/2 green pepper, 1/2 red pepper, can of tomatoes, salt, cumin, oregano, and pepper with about 6 cups water. This a little soupy, but for meal one I used a slotted spoon to serve the beans over rice. Then for meal two we had actual soup!
