Jeff does a terrific job of turning leftovers into tasty creations. When we remember, we'll share some of his conconctions with you! This one is called Chicken Ranch Spaghetti and he made it for his lunch yesterday. Michelle had some for breakfast and asked him to write down the recipe. There really isn't a recipe, but that's okay. Jeff made it again for lunch today and it was just as good the second time around.

Heat a little olive oil (the pepperoncini variety adds some "umph") in a frying pan. Toss in some chopped onions (about a 1/4 cup) and minced garlice (1/2 tsp) and sauté briefly. Stir in cooked chicken (1/3 cup), spaghetti sauce (3/4 cup), cooked spaghetti (2 cups), and Ranch dressing (2 tablespoons). Heat through. Sprinkle with Parmesan cheese and eat. Makes enough for one active, growing teenager and one little sister. Note: all measurements are guesses.
