Brad's Favorite Cookie?

The cookie jar (well, at least the imaginary one) needed re-filling and I asked Brad to tell me what type to make. He suggested peanut butter cookies, so that's what we did.


Peanut Butter Cookies 

1/2 cup shortening 
1/2 cup peanut butter 
1/2 cup sugar 
1/2 cup brown sugar 
1 egg 
1 1/4 cups flour 
3/4 teaspoon baking soda 
1/2 teaspoon baking powder 
1/4 teaspoon salt 

Mix together the shortening, peanut butter, sugars and egg. Blend in the remaining ingredients. If desired, cover and chill about 1 hour. Shape dough into 1-inch balls and place on greased cookie sheet. Dip a fork in flour or sugar and press on each ball to make a criss-cross pattern. Bake at 375° for 8-10 minutes. Makes about 2 dozen cookies.

Halloween (or whenever!) variation: Stir in 1/2 cup mini Reese's pieces. Note that they're even more festive if you place a few regular-sized Reese's pieces on top before baking.
