Oat Wheat Pan Rolls

A few years ago the Young Women started a tradition of having a mother/daughter "gratitude dinner" in November. Michelle's assignment the first year was to bring rolls. We found this new recipe to try that had healthy ingredients and was quick and easy. It was a hit at that dinner, and every time we've made it since.

Oat-Wheat Pan Rolls

2 cups milk
1 cup quick oats
1/4 cup butter or margarine
1 tablespoon yeast
1/3 cup warm water
1/3 cup brown sugar
1 egg
1 1/2 teaspoons salt
1 cup wheat flour
3 1/2 cups white flour

Boil milk and stir in oats and butter. (Actually, I combine the oats, 2/3 cup dry milk powder and the butter in my mixing bowl. Then I boil 2 cups water and pour it over.) Dissolve yeast in warm water. Combine all ingredients and knead for 7-10 minutes. Cover and let rise one hour. Punch down and form into 24 balls. Place in two greased 9x13" pans. Let rise 45 minutes. Bake at 350° for 20 minutes.

  1. I used this dough to make cinnamon rolls this week. While they were fine, I don't recommend it. Cinnamon rolls really need to be made with all white flour!
