Pear Bread

Today is the start of Lisa's "Fall Fruits Festival" and she's starting with pears. 
I don't have a picture for this recipe, but I may add one in December. This is our traditional "1st Day of Christmas" treat, because we prefer pears over partridges. Be sure to check her blog for more yummy pear recipe links!




Pear Bread

1 cup vegetable oil
2 cups sugar
3 eggs
2 1/2 cups pears, peeled & chopped
1/2 to 1 cup pecans, chopped
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Preheat oven to 350°. In a medium mixing bowl, combine oil, sugar, eggs, and vanilla, blending well. Stir in pears and pecans. Combine the dry ingredients and mix in. Pour the batter into 2 greased 8x4" loaf pans. Bake one hour, or until a toothpick inserted in the center comes out clean. Cool loaves 10 minutes, then remove from pans and cool on wire racks.

Notes: I normally use 1 quart bottled pears, drained and chopped, and reduce the sugar to 1 1/2 cups. This recipe makes 4 mini loaves, bake for 40 minutes.
