Chiles Rellenos Casserole

This was a delicious, colorful dish - one that would be great for a holiday brunch.Chiles Rellenos Casserole

6 eggs
1 cup milk
1/4 teaspoon paprika
salt and pepper
1-2 cans green chiles, drained
1 red pepper, diced
4 oz. Cheddar cheese, grated

Combine everything and pour into a lightly greased 2-quart casserole. Bake at 350° for 35-40 minutes or until puffed and golden brown. Cool on wire rack for 10 minutes, then cut into squares or wedges to serve.
