Ensalada de San Isidro

 

Also known as San Isidro Salad

  • 1 head Boston or Bibb lettuce, torn into bite-size pieces
  • 2 large tomatoes, cut in eighths
  • 4 thin slices Spanish onion
  • 1 can (7-oz) chunk white tuna, drained
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
Carefully mix lettuce, tomato, onion, and tuna. In a different bowl, combine oil, vinegar, and seasonings. Toss together lightly. Serves 2 as a main dish.
