Ensalada de San Isidro
Also known as San Isidro Salad
- 1 head Boston or Bibb lettuce, torn into bite-size pieces
- 2 large tomatoes, cut in eighths
- 4 thin slices Spanish onion
- 1 can (7-oz) chunk white tuna, drained
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 1/2 teaspoon garlic powder
- salt and pepper to taste
Carefully mix lettuce, tomato, onion, and tuna. In a different bowl, combine oil, vinegar, and seasonings. Toss together lightly. Serves 2 as a main dish.
