Another Muffin Experiment


We all love the Costco muffins, even if they are too rich and huge for daily consumption. A while ago I came across a copy-cat recipe and decided to give it a try. The finished result tasted just like the original, although since I made them at home they were normal-sized muffins. And if you do it that way, it's only 133 calories per muffin! We tried the chocolate version, but someday I'll try some of the other ones.

   

Costco Muffin Recipe

18 ounce cake mix
2 tablespoons flour
1 teaspoon baking powder
3 eggs
2/3 cup milk
1/3 cup oil
desired add-ins (see below)

Combine dry ingredients and liquid ingredients separately, then mix together gently. Stir in add-ins. Fill 24 muffin liners with batter. Bake at 375° for 20 minutes.

Variations:
Chocolate - use chocolate cake mix and 1 1/2 cups mini chocolate chips
Almond Poppyseed - use white cake mix, 2 teaspoons poppy seeds and 1 teaspoon almond extract
Blueberry - use white cake mix and 1 1/2 cups blueberries
Cinnamon Spice - use spice cake mix and top with cinnamon streusel
Lemon Poppyseed - use lemon cake mix and 2 teaspoons poppy seeds

If anyone ever tries the next two variations, let me know what worked for you!
Apple Crumb - probably white or spice cake mix and diced apples, struesel topping
Banana Nut - probably yellow or white cake mix, bananas and walnuts
