Bollitos

It's a good thing I found some pictures, because I doubt we'll ever want to make this recipe again! However, if you're into serving black-eyed peas on New Year's Day and want to try something different, here's a contender.

Black-Eyed Pea Fritters (or Bollitos)

  • 1/2 pound dried black-eyed peas
  • 4 cloves garlic
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 4-6 tablespoons water
Rinse the dried peas in cold water and soak overnight in water, covered. When peas have softened, remove and discard their skins (they should just rub off) and soak an additional 30 minutes. Drain and rinse again. Combine the peas and seasoning in a food processor and with the motor running, add the water until mixture is smooth and thick.

Heat 2-3" of peanut oil in a deep pan to 375 degrees. Drop pea mixture by tablespoons into hot oil and fry until golden brown. Drain on paper towels and serve hot.
