Frituras de Bacalao

aka Codfish Fritters

  • 1/2 pound salted codfish
  • 1 onion, minced
  • 1/2 cup flour
  • 1 heaping teaspoon baking powder
  • 2 eggs, beaten
  • 3 tablespoons water
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 clove garlic, minced
Cover codfish with water and soak overnight, changing the water 2 or 3 times.
Debone codfish, remove dark skin, shred finely and beat until light. Add onion, flour, and baking powder. Mix in eggs, and remaining ingredients thoroughly.
Heat oil in a large skillet until hot. Drop batter by spoonfuls into the hot oil and fry until golden brown, turning once. Drain on paper towels and serve hot. Makes 18.
