Mom's Ice Cream Balls

Dinner at the in-law's last Sunday included a dessert that I've never had before, although Mom says it's been a go-to recipe for company dinners for years. I can see why. I found a recipe online with what looks like the proper list of ingredients, but no picture. I guess that means we have to make it to see if it's the same and to take a picture to add to this post. Such a difficult and onerous task ahead!


PEANUT BUTTER ICE CREAM BALLS 
1 c. honey graham cracker crumbs
1/4 c. chunky peanut butter
2 tbsp. white or brown sugar
1/4 tsp. cinnamon
1 qt. vanilla ice cream


Blend graham cracker crumbs, peanut butter, sugar, and cinnamon. Scoop ice cream into large balls and roll into crumb mixture until well coated. Put in cup cake papers in cup cake pan. Freeze until ready to serve. Pour chocolate sauce over balls before serving.

Note: Mom usually ladles hot fudge in a bowl, tops with the ice cream, and serves with a couple lace cookies or vanilla wafers on the side.
