Cajun Chicken Pasta

The menu for today had another copycat recipe to try - Cajun Chicken Pasta. Doesn't it look delicious? I'm sure if I had followed that recipe, we would have enjoyed our dinner. However, I didn't follow the recipe exactly, and we still thoroughly enjoyed our dinner. I had leftover angel hair pasta (from this recipe) to use, so I didn't cook up some fresh penne. There was also some leftover cooked turkey in the refrigerator, so I didn't feel like thawing some boneless chicken breast. I used minced garlic instead of garlic powder and green onions instead of flat leaf parsley (as mentioned in the comments at the above link). Maybe some day I'll try the recipe again with chicken and penne, but turkey and angel hair pasta work quite well.

Cajun Turkey Pasta
(scaled for two)

  • 1 1/4 cups cooked chicken or turkey 
  • 1-2 teaspoons Cajun seasoning
  • 1 tablespoon butter
  • 1/2 teaspoon minced garlic
  • 1/2 cup cream or milk or combination
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup diced tomatoes
  • 1 green onion, sliced
  • 1 cup cooked pasta (angel hair, penne, or whatever!)
Toss the chicken with the Cajun seasoning and set aside. (Or, if starting with uncooked meat, saute a couple of boneless chicken breasts and season with the Cajun seasonings and set aside. Then serve with the pasta and sauce.)

Melt the butter and briefly cook the garlic, then stir in the chicken, cream and Parmesan cheese. Let simmer for a bit to thicken (sprinkle in some flour if necessary), then stir in the tomatoes, green onion, and pasta. 

If desired, garnish with extra Parmesan cheese or sliced green onion when serving.
