Mint Brownies a la BYU

There are already several brownie recipe posts on this blog, but there's nothing wrong with having one more, right? Anyway, these bring back fond memories of our time at BYU. Have fun creating your own new memories! 

Brownie Layer

  • 1 cup melted butter or margarine
  • 2 tablespoons honey
  • 4 eggs
  • 2 cups sugar
  • 1 3/4 cups flour
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
Combine all ingredients and pour into a greased 9x13" pan and bake for 25 minutes at 350 degrees. Cool thoroughly.

Mint Layer
  • 5 tablespoons butter or margarine, softened
  • 2 1/3 cups powdered sugar
  • 3 tablespoons milk
  • 1 tablespoons light corn syrup
  • 1/2 teaspoon peppermint extract
  • 2 drops green food coloring
  • dash salt
Combine all ingredients and frost the brownies. Freeze for 10-15 minutes.

Chocolate Frosting
  • 1/2 cup butter or margarine, melted
  • 4 cups powdered sugar
  • 6 tablespoons cocoa powder
  • 1/4 cup milk
  • 1/2 teaspoon vanilla
Combine all ingredients and frost the brownies. Cut and serve.
