Swiss Onion Soup

I found a new recipe that uses Swiss cheese! This is a variation of French Onion Soup, except even better, in my opinion, because it's a creamy soup instead of a "brothy" one. Once again, a Taste of Home recipe comes through for us!

Swiss Onion Soup

  • 1/4 cup butter
  • 3 onions, halved and sliced
  • 1 3/4 cup chicken broth
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 1 cup Swiss cheese, grated
  • 1 tablespoon parsley
  • salt and pepper to taste
Melt the butter in a saucepan, then add the onions. Cook over low heat until carmelized; this takes about 20 minutes. Add the chicken broth and simmer for about 10 minutes. Combine the flour and milk in a jar and shake well; stir into the soup, using a strainer to remove lumps if necessary. Cook until thickened. Stir in the cheese until melted. Season to taste. Garnish with croutons and additional cheese if desired.
