Strawberry Wheat Bread

Here's an old family recipe (thanks Aislyn!!) that hasn't been shared to the world yet (although I'm sure you could find a similar recipe somewhere). Anyway, this is a terrific way to use strawberries that have been languishing in the freezer. You could use fresh ones, but as someone else commented, there are so many other delicious uses for fresh ones, why waste them in something that goes in the oven.

Strawberry Wheat Bread

  • 2 cups whole wheat flour
  • 2 cups white flour
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinammon
  • 2 cups frozen, sliced strawberries, thawed
  • 4 eggs
  • 3/4 cup vegetable oil
  • 1/2 cup chopped nuts, optional
Combine dry ingredients; combine wet ingredients; stir together just until mixed. Pour into 6 mini loaf pans (or 2 regular sized ones) and bake at 375 degrees for 35-40 minutes (or 55-60 for the larger ones). Cool on a rack.
