Plum Juice

Do you ever get annoyed when you buy a special ingredient for a recipe, yet you still have some leftover after making the recipe? I don't know that I do, because it gives me a chance to try another new recipe!

Plum Chutney called for one cup of "SunSweet Plum Smart Light Juice" which comes in a 48 ounce bottle; so, what to do with the remaining five cups?

You could just drink it, and most people would (and we did), but I figured we'd also try a couple of fancier options. Wayne said this smoothie was absolutely delicious - great texture and tart but sweet. We'll have it again, although maybe with some adjustments depending upon what's in our freezer at the time.

Plum Smoothie

  • 5 ounces vanilla Greek yogurt
  • 1 cup frozen blueberries
  • 5 prunes
  • 1 cup plum juice
  • 8 ice cubes
Combine all ingredients in a blender and mix until smooth.

Sometime ago when trying to make our breakfasts a bit more exciting, I found a recipe that used grape juice instead of water for cooking cracked wheat cereal. While using all juice was a bit strong, using half juice and half water makes a tasty breakfast. Plum juice works just as well, and so does cranberry juice.
