Poke Bowls

The other day I rediscovered some edamame and fake crab languishing in the freezer and decided it was time to put them out of their misery, hopefully in a way that wouldn't cause us any misery! We've never tried Poke Bowls, and this seemed like a good time to rectify that fact. While it would make more sense to use Sushi Rice, I had already defrosted some leftover wild rice, so that's what we used. It still worked, and we'll have these again sometime. It's a great way to clean out the refrigerator.


I took ideas from here and here (and a bunch of other sites), but this is really a create-your-own dish. Over the cooked rice I placed the crab (or Krab), diced cucumers, sliced carrots (using a potato peeler) and edamame. I think most people use cold ingredients, but we heated up everything but the cucumber, because we prefer hot food for dinner. Give it a sprinkle of sesame seeds and serve with a simple sauce.

Ginger Sauce
  • 2 tablespoons soy sauce
  • 1/2 tablespoon rice wine vinegar
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/2 teaspoon freshly grated ginger

At the end of the meal, there were still some ingredients leftover. The next day for lunch, I mixed them with some eggs and turned them into an Asian-inspired frittata, and it was quite delicious. I was especially impressed that it held together well enough to flip all at once!


Don't be afraid to experiment with new ways of combining leftovers. You may just discover something you love!
