Sam's Request

"If you could have anything you wanted for breakfast today, what would you request?" Sam's answer: "Well, I'm getting tired of the hotel food, so not waffles, oatmeal, or even cold cereal. How about green muffins with chocolate chips?" That's something I've never tried, but miraculously there was a bag of spinach in the refrigerator, so it was an easy wish to fulfill. I looked at Mel's Kitchen recipe for Hulk Muffins, and I'm sure that would work very well. However, this one called for honey instead of sugar and regular milk instead of buttermilk, and even added some oat flour, so that's the one I used.

Super Green Hulk/Monster/Popeye Spinach Muffins

  • 3/4 cup milk
  • 1/4 cup honey
  • 1/8 cup canola oil
  • 1 cup ripe banana (2 small or 1 large)
  • 2-3 cups spinach leaves (mine measured 3 ounces)
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup oat flour (or regular oats)
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips
Combine the milk, honey, oil, banana, spinach, eggs, vanilla and oats in a blender and mix until smooth. Combine the flour, baking soda and salt in a large bowl. Then pour the spinach mixture into the flour mixture and stir just until combined. Gently mix in the chocolate chips. (Save a few for sprinkling on top, if desired.) Spoon into a greased muffin pan and bake at 375 degrees for 18 minutes. Makes about 12.
