Blackened Barramundi

This was a simple dish, yet definitely worthy of Sunday dinner status. Simply sprinkle jerk seasoning on the fish filets (a little on mine, a lot on hubby's), sauté in olive oil with a bit of onion and/or garlic. Season with salt and lemon juice and serve warm. I added a touch of cream to "deglaze" the pan and provide a sauce for our "ancient grains" pilaf on the side.
