Brazilian Rice

Here's the second recipe in the Rice and Beans section, and it was a wonderful one, and so colorful as well.

Sauté about 1 cup each diced carrots, green pepper, onions and a fresh tomato in olive oil. Stir in 4 cups of cooked rice with a cup each of green peas and ham and 2 tablespoons of raisins (optional). Serve hot, with pork or chicken.

We served it with plantains and Oktoberfest chicken - amazingly delicious!!


Version 2 omitted the raisins, used frozen instead of canned peas, and was served with pork (and Brussel sprouts). Believe it or not, I actually preferred the dish with the raisins!
