Double Fake Lobster Rolls

You can find plenty of recipes for "imitation crab lobster rolls" on the internet, and a couple of the differences I noticed were whether the mayonnaise and/or butter was put on the roll or mixed with the seafood. I imagine you could prepare them however you want! We combined ideas from here and here and here. The end result was a bit messy, but delicious! 

Double Fake Lobster Rolls

  • 8 ounces imitation crab meat, cut in small pieces and patted dry
  • 2 tablespoons mayonnaise
  • 2 tablespoons finely chopped celery
  • 1/2 tablespoon minced parsley
  • 1/2 tablespoon lemon juice
  • Salt, black pepper and cayenne pepper to taste
  • 1 tablespoon butter, melted
  • Soft bread roll
Combine the crab meat, mayonnaise, celery, parsley, lemon juice and seasonings. Let set for a few minutes if desired. Spoon onto roll and drizzle with butter. Serve.

Note: I decided to warm my roll first, by buttering it and placing it cut-side-down on a hot frying pan for a few seconds. I spread Wayne's roll with more mayonnaise before putting on the crab mixture. Alternatively, you could spread the mayonnaise on the bread, grill that, and make the "salad" with melted butter instead of mayonnaise. I wonder what method is most authentic.
