Beef Cacciatore

We had a chuck roast in the freezer that I wanted to use for Sunday dinner, but we didn't have enough potatoes for regular pot roast, so I had to find another recipe. This one was delicious and we may just have it again.

Beef Cacciatore

  • 1 tablespoon olive oil
  • 2 onions, quartered and sliced
  • 1/2 to 1 cup sliced green or red peppers
  • 1 tablespoon minced garlic
  • 1 3-pound chuck roast
  • 1 can (28 ounce) crushed tomatoes
  • 1 can (16 ounce) diced tomatoes
  • 1/2 cup red wine or water
  • 1 tablespoon sugar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup sliced mushrooms
  • 1 can (12 ounce) tomato paste
Heat olive oil in a skillet and cook the onions, peppers and garlic for a few minutes. Place in the crock pot and then brown the roast on all sides in the same skillet. Add to crock pot with all other ingredients except the mushrooms and tomato paste. Cook on low for about 6 hours. After about 5 hours, stir in the mushrooms. When done, remove the beef and stir in the tomato paste to thicken the sauce. Slice the beef and serve with the sauce over cooked noodles or rice. Serves 6-8.


Note: This actually makes a lot of sauce. Use the leftovers for some Spaghetti and Meatballs if desired.
